HELP...A COELIAC IS COMING FOR DINNER !!!
If you love to entertain and one or more of your guests has Coeliac Disease (Celiac, CD) following this guide will help make their visit both enjoyable and healthy. There are a wealth of sites out there focused on gluten free diets, however very few on how to prepare for a visit from a coeliac guest. Following a gluten-free (G-free) diet is not easy if you have guests who have been diagnosed with CD then show them that you care by providing a selection of G-free meals and snacks.
Is a G-free diet good for you?If you plan your meals around naturally G-free foods you remove a lot of processed foods, additives and refined high carbohydrates from your diet, however as many gluten-containing foods (like pasta, breads and cereals) are fortified with iron and vitamins there is a risk that you may be missing the following nutrients:
Chromium, fibre, folate, iron, magnesium, niacin, phosphorus, potassium, riboflavin, selenium and thiamine. A well balanced diet will usually provide all the nutrients you need. The following link has a chart that lists nutrient rich foods to include in a G-free diet. Nutrient Rich G-Free Foods
